Wash celery and cut into 1 inch pieces
Add water and cook until very soft
Rub through sieve
Heat milk in double boiler
Add milk to celery
Melt fat
Mix flour and seasoning with the fat
Mix into the soup

Put fat in a sauce pan and heat
Add flour
Cook until smooth and bubbly
Remove from heat
Add milk and return to heat
Bring to a boil stirring constantly
Boil one minute
Add soup and stir
Bring to a boil
Serve
I added a little turmeric, cayenne pepper, and super fine
ground dry mustard.
